This gluten-free chocolate delight dessert has four layers: a buttery pecan crust, a sweet cream cheese layer, thick chocolate pudding, and a cloud of whipped topping on top. It’s cold, creamy, and you can scoop it straight out of the 9×13 pan. No judgment here!

The classic version uses a flour and pecan shortbread crust, which is the only part that isn’t gluten-free. I make that crust with homemade oat flour instead, which is just gluten-free oats blended until fine. The other three layers just need a quick label check.

In our family, chocolate delight is a tradition. We have it every Saturday night after dinner! Then my husband got sick from gluten, and suddenly our Saturday dessert was off the table for him. So I started working on a gluten-free version. When he finally tasted it, he thanked me so many times. He told me he’d been craving it the whole time but couldn’t eat it. Until now.

And yes, it has to chill for at least 4 hours. That’s the hardest part.

Is chocolate delight gluten-free?

Not usually. The crust in most chocolate delight recipes is made with all-purpose wheat flour, butter, and pecans, pressed into the pan and baked like a shortbread.

For this version, I make my own oat flour. I blend certified gluten-free oats until they’re fine and powdery, and that’s it. The gluten-free label really matters here, because regular oats are often grown or processed alongside wheat. The butter and pecans hold the crust together, so you don’t need xanthan gum.

One heads-up: a small number of people with celiac disease also react to oats, even pure gluten-free ones. Health Canada’s review on oats and celiac disease found most people can handle moderate amounts, but it’s worth checking with a doctor first. If you’re baking for someone who can’t have oats, use a 1-to-1 gluten-free flour blend instead (it’s in the substitutions below).

Then check the labels on the boxed stuff. Instant pudding mix, whipped topping, powdered sugar, and chocolate chips are often gluten-free, but recipes change and some are made on shared lines. In the US, a food labeled gluten-free has to contain less than 20 parts per million of gluten under the FDA’s gluten-free labeling rules. So if you’re baking for someone with celiac disease, that label is what you want to see.

That’s really it. One swap and a few label checks.

Recipe ingredients

Now, on to what you need for each layer.

For the crust

  • Oat flour: Blend certified gluten-free old-fashioned oats in a blender or food processor for about a minute, until it looks like flour with no flakes left. About 1 3/4 cups of oats makes 1 1/2 cups of oat flour. Measure it after blending, and spoon it into the cup instead of packing it down.
  • Butter: Melted. Salted or unsalted both work. If you use unsalted, keep the pinch of salt.
  • Pecans: Chop them finely, about the size of rice grains. Big pieces make the crust hard to press flat and hard to cut through.
  • Sugar: Just 2 tablespoons.

For the cream cheese layer

  • Cream cheese: Full-fat, in the block, softened until a finger leaves a dent easily. The tub kind is softer and makes this layer runny. Cold cream cheese leaves little lumps you can’t beat out.
  • Powdered sugar: Sift it if it’s clumpy.
  • Whipped topping: You’ll fold 1 cup of it into the cream cheese, which makes this layer light instead of dense like cheesecake.

For the chocolate layer

  • Instant chocolate pudding mix: Two small boxes (3.9 ounces each). It has to be instant, not cook-and-serve. Chocolate fudge flavor gives you a darker layer.
  • Cold whole milk: Cold matters, because instant pudding sets faster and thicker with cold milk. Lower-fat milk works but sets a bit softer.

For the top

  • The rest of the whipped topping.
  • Chocolate shavings, mini chocolate chips, or more chopped pecans. All optional, all good.

How to make gluten-free chocolate delight dessert

The full steps are in the recipe card below. These are the parts worth slowing down for.

The crust: Stir the flour, pecans, sugar, and salt together, then pour in the melted butter. It should look like damp sand and hold together when you squeeze a handful. Press it into a 9×13-inch pan with the bottom of a measuring cup so it’s even. Bake at 350°F for 18 to 22 minutes, until the edges turn light golden. Gluten-free flour doesn’t brown as much as wheat flour, so don’t wait for it to look dark.

Cool the crust completely. I mean all the way, about an hour at room temperature or 20 minutes in the fridge. A warm crust melts the cream cheese layer and you end up with a swirl instead of clean layers.

The cream cheese layer: Beat the cream cheese and powdered sugar until smooth, then fold in 1 cup of whipped topping by hand. Spread it gently. Small dollops all over the crust, then connect them with an offset spatula, so you don’t drag up crumbs.

The pudding: Whisk the pudding mix with the cold milk for 2 minutes. Let it sit for about 5 minutes, until it’s thick enough that a spoon leaves a trail. Then spoon it over the cream cheese layer. If you pour it while it’s still thin, it’ll sink into the layer below.

The top: Spread the rest of the whipped topping over the pudding, add your shavings or nuts, cover, and chill for at least 4 hours. Overnight is even better, because the layers firm up and cut cleaner.

Tips for clean layers

Why are my layers mixing together? Almost always it’s a warm crust or thin pudding. Cool the crust fully and let the pudding thicken before it goes on.

My crust is crumbly when I cut it. That usually means it was underbaked or the pecans were chopped too coarse. Next time, bake until the edges are clearly golden. This time, just serve it with a spoon. Nobody complains about chocolate delight in a bowl!

My crust is too hard. It was probably pressed in very firmly or baked a few minutes too long. Press just hard enough that it holds together.

For neat squares, chill it overnight and cut with a long, sharp knife. Wipe the blade with a damp paper towel between cuts. A thin spatula slid under the crust lifts each piece out in one go.

Substitutions and variations

Flour blend instead of oat flour: Use 1 1/2 cups of a 1-to-1 gluten-free flour blend. This is the one to pick if you’re baking for someone who can’t have oats. If your blend has no xanthan gum, add 1/2 teaspoon.

Almond flour crust: Use 1 3/4 cups blanched almond flour, 1/2 cup finely chopped pecans, 2 tablespoons sugar, and 6 tablespoons melted butter. Bake at 350°F for 12 to 15 minutes. Almond flour browns fast, so start checking at 12.

Chocolate cookie crust: Crush gluten-free chocolate sandwich cookies into about 2 1/2 cups of fine crumbs and mix with 6 tablespoons melted butter. Bake 8 to 10 minutes, or skip the oven and just chill it for 30 minutes. This makes the whole thing very chocolatey.

Nut-free: Leave out the pecans and add 1/4 cup more oat flour to the crust. Top with chocolate shavings instead of nuts.

Homemade whipped cream instead of whipped topping: Whip 2 cups heavy cream with 1/2 cup powdered sugar and 1 teaspoon vanilla to stiff peaks. You’ll get about 4 cups. It tastes fresher but holds up for less time, so serve it within 2 days.

Dairy-free: Use vegan butter, dairy-free cream cheese, and a dairy-free whipped topping. Instant pudding often sets softer with plant milk, so use 2 1/2 cups of a full-fat oat or soy milk instead of 3 cups. Check that your pudding mix itself doesn’t contain milk powder.

Chocolate peanut butter: Beat 1/2 cup creamy peanut butter into the cream cheese layer and sprinkle 1/2 cup chopped peanuts on top instead of pecans.

Other pudding flavors: Butterscotch, vanilla, or lemon all work the same way. Same two boxes, same 3 cups of milk.

Storage and make-ahead

Keep it covered in the fridge for up to 4 days. The crust softens a little more each day, so it’s at its best on days 1 and 2.

This is a great make-ahead dessert. Make it the day before a party and it’ll actually cut better than if you’d made it that morning. If you’re using chocolate shavings, add them right before serving so they don’t get soft.

Planning a bigger dessert table? Bake something from the gluten-free cake recipes the same day this one is chilling, and you’re done with dessert a day early.

Can you freeze it? Yes, for up to 1 month, wrapped tightly. Just know that the pudding gets a bit watery if it thaws all the way. I’d serve it partly frozen, after about 15 minutes on the counter, like an ice cream cake.
