I love Drizzilicious mini rice cakes. They’re tiny, crunchy, and drizzled with just enough sweetness to feel like a treat. So I came up with a Drizzilicious copycat I can make at home.
I eat them around my workouts, and I make big batches for family and friends too. The method is so easy: spread plain mini rice cakes on a tray, zigzag melted chocolate over the top, add a topping, and chill for 15 minutes. Below you’ll find the base recipe plus four mini rice cake flavors: dark chocolate sea salt, birthday cake, cinnamon sugar, and white chocolate peanut butter.
What are Drizzilicious mini rice cakes?
Drizzilicious is a brand of bite-size rice cakes with a sweet drizzle on top. They come in small 4 oz bags and flavors like birthday cake, s’mores, lemon, and very berry, plus seasonal ones like pumpkin spice and peppermint.
They’re a little different from plain puffed rice cakes. The cakes are made from white rice flour, corn, tapioca, and quinoa with chia and flax, and the drizzle is a sweet coating made with sugar and palm kernel oil. The bags are labeled gluten-free and vegan (Target).
On most bags, one serving is about 21 pieces (21 g) and has 90 calories. The birthday cake flavor has 16 g of carbs and 5 g of sugar per serving (Stop & Shop).
Drizzilicious at Costco: pack size, flavors, and price
Yes, Costco sells Drizzilicious! The usual Costco item is a variety box of 32 snack bags (0.74 oz each) in three flavors: s’mores, birthday cake, and cinnamon swirl. Each little bag is one 21-piece serving (Warehouse Runner).
A price tracker that checks Costco warehouses lists the box at around $14.79, which is less than 50 cents a bag. Costco has also carried a 12.25 oz family-size bag of the French toast flavor (Parade via AOL). Prices and flavors change by warehouse and season, so check the Costco app before you go.
No Costco membership? Sam’s Club sells a 32-pack variety box too, with birthday cake, French toast, and cookies and cream (Sam’s Club). For single 4 oz bags, try Target, ShopRite, or Stop & Shop. Or make a tray at home with the recipe below and pick your own flavors.
Why make them at home?
I still love the store-bought bags. But homemade ones have a few things going for them.
You get real chocolate instead of a flavored coating. You decide how sweet they are (70% dark chocolate and a light drizzle keeps them much less sweet). And you can make four flavors on one tray from a single bag of plain minis. Store-bought flavored rice cakes come one flavor per bag.
Ingredients for homemade mini rice cakes
Plain mini rice cakes: One 4.2 oz (119 g) bag, about 60 minis, lightly salted or unsalted. Paskesz Plain Wholegrain Brown Ultra-Thin Mini Rice Cakes are a good pick: just rice and sea salt, and labeled gluten-free. They’re sometimes sold as rice cake bites. If you’re making these for someone with celiac disease, check that the bag is labeled gluten-free. Can’t find plain minis? Break thin rice cakes into quarters. Less cute, same crunch.
Chocolate: 2 oz (60 g) per batch. Chopped bars melt smoother than chips, because chips are made to hold their shape. For the dark flavor, Lindt Excellence 70% works well. For the white chocolate flavors, pick a bar made with cocoa butter, like Ghirardelli’s white chocolate baking bar.
Coconut oil: Just 1/2 teaspoon. It thins the chocolate so it falls off the spoon in a thin ribbon instead of a blob.
Toppings: Flaky salt, rainbow sprinkles, cinnamon sugar, or chopped peanuts, depending on the flavor. Read the label on sprinkles, since a few brands aren’t gluten-free.
Tools: A rimmed baking sheet, parchment paper, and a zip-top bag for drizzling. A spoon works too, it’s just messier.
How to make Drizzilicious-style mini rice cakes
Line a rimmed baking sheet with parchment and spread the mini rice cakes in a single layer, touching each other. Packed close together, they catch more drizzle and less ends up on the paper.
Melt the chocolate and coconut oil in the microwave in 20-second bursts, stirring each time. Stop when a few small lumps are left and keep stirring until it’s smooth. White chocolate burns faster, so use 15-second bursts for that one.
Pour the chocolate into a zip-top bag and snip off a tiny corner, smaller than you think (about 1/8 inch). Zigzag it back and forth across the whole tray. Then turn the tray and zigzag again in the other direction. That crisscross is what gives them the Drizzilicious look!
Add your topping right away while the drizzle is still wet, or it won’t stick. Chill for about 15 minutes, until the chocolate is firm and doesn’t smudge when you touch it. Break apart any minis that stuck together.

Mini rice cake flavors to try
Each flavor makes one batch: one bag of about 60 minis. Make a full tray of one flavor, or split the tray into sections and try a few at once.
Dark chocolate sea salt mini rice cakes
2 oz (60 g) 70% dark chocolate melted with 1/2 teaspoon coconut oil, then 1/4 teaspoon flaky sea salt over the wet drizzle. The salt makes the chocolate taste richer. This is the one that’s closest to a real chocolate bar.
Birthday cake mini rice cakes (Drizzilicious copycat)
2 oz (60 g) white chocolate melted with 1/2 teaspoon coconut oil, then 1 tablespoon rainbow sprinkles. Use jimmies or nonpareils, whichever you like. It’s my take on the Drizzilicious birthday cake flavor, but with real white chocolate.
Cinnamon sugar mini rice cakes
Stir 1/4 teaspoon cinnamon into 2 oz (60 g) melted white chocolate with 1/2 teaspoon coconut oil. After drizzling, sprinkle with 1 tablespoon sugar mixed with 1/2 teaspoon cinnamon. It tastes like the top of a snickerdoodle.
White chocolate peanut butter mini rice cakes
Melt 2 oz (60 g) white chocolate with 1 tablespoon smooth peanut butter. Skip the coconut oil here, since the peanut butter thins the chocolate on its own. Top with 1 tablespoon chopped roasted peanuts if you want extra crunch.

Tips for drizzling mini rice cakes
If the chocolate comes out of the bag in thick clumps, it has cooled down. Warm the bag in the microwave for 5 to 10 seconds and squeeze it gently to mix.
Keep water away from the chocolate. Even a drop from a wet spoon can make it seize into a thick paste. If that happens, stir in another 1/2 teaspoon of coconut oil and it usually loosens up.
White chocolate sets softer than dark chocolate, so give those flavors a few extra minutes in the fridge, especially if your kitchen is warm.
Don’t worry if the drizzle isn’t perfectly even. Some minis will get more chocolate than others, and those are the best ones anyway.
How to store homemade mini rice cakes
Keep them in an airtight container at room temperature for up to 5 days, with parchment between the layers. If your kitchen is warm, store them in the fridge so the drizzle stays firm. They’re crunchiest in the first 2 or 3 days.
I don’t recommend freezing them. When they thaw, moisture forms on the outside and the minis go soft.
Are homemade mini rice cakes healthy?
They’re still a sweet snack, just a small one. I answered the bigger question in are rice cakes healthy: rice cakes digest fast and won’t keep you full on their own. So if you eat them around a workout like I do, add some protein on the side, like Greek yogurt or a protein shake. For the numbers on plain rice cakes, see my rice cake nutrition facts.
Drizzilicious mini rice cakes FAQ
Are Drizzilicious mini rice cakes gluten-free?
Yes, the store-bought bags are labeled gluten-free and vegan. Homemade ones are gluten-free as long as your rice cakes, chocolate, and sprinkles are too, so check all three labels.
How many calories are in Drizzilicious mini rice cakes?
90 calories per serving, which is about 21 pieces (21 g). My homemade dark chocolate sea salt version has about 224 calories per serving (about 15 minis), made with Paskesz minis and Lindt 70% dark chocolate.
Does Costco sell Drizzilicious mini rice cakes?
Yes. Costco usually carries a 32-bag variety box with s’mores, birthday cake, and cinnamon swirl, listed at around $14.79 in many warehouses. Flavors and prices vary by location.
Can I use regular rice cakes instead of minis?
Yes. Break thin rice cakes into quarters and drizzle them the same way. Or keep them whole and coat the tops, like my chocolate rice cakes.
Can I make them dairy-free or vegan?
Yes. Use dairy-free dark chocolate, or a vegan white chocolate for the lighter flavors. Most plain rice cakes are already dairy-free, but check the bag.
Why is my drizzle still soft?
White and milk chocolate set softer than dark, and a warm kitchen slows everything down. Put the tray back in the fridge for 10 more minutes and store them in the fridge if it’s hot out.
